Try making a meal out of plain chicken breasts. Take 2 pieces of chicken breasts that have been cut in thin slices. Next one will need some plain yogurt and one egg. You will also need some bread crumbs or some flaked cereal. Start by scrambling the egg and then dipping in the breast pieces into this egg. One can substitute the yogurt here in place of the egg. Then the chicken breast in some bread crumbs. Fry these pieces in some olive oil. Then place the pieces in the oven to bake. One it is ready place it on a plate and let it cool. Finally wrap it in some foil and place in the freezer.
Another easy and quick option form a toddler meal is pancakes. Try making vegetables and cheddar pancakes. For this you will need 2 carrots, some zucchini, potatoes and some cheddar cheese. You will also need 2 eggs, a quarter cup of bread crumbs, a quarter teaspoon of salt, some oil and some pepper. Start by peeling the carrots and the potatoes and proceed to grate them. Then do the same for the zucchini. Add all these vegetables along with the cheddar cheese to a large bowl. While stirring the ingredients together one can also stir in the eggs, the salt, the pepper and the bread crumbs. Then heat the oil in a pan and pour in the batter that has been previously stirred. Flatten the contents using a spatula. Next cook the contents on either side by flipping occasionally. Once each pancake is done, set it aside. These are ready to eat. They can be packed in foil or a plastic wrap and frozen till required.
